Had this sent to me by Phil. It makes a lot more than you'd think, so don't be tempted to double up.

200g of oats - says rolled oats but this is just normal porridge - in the cereal isle
45g desiccated coconut - find this in the baking aisle
45g of pumpkin seeds - either hidden in the baking isle or with the rest of the nuts
150g of chopped nuts - buy mixed nuts from Aldi. Then chop.
1 teaspoon of cinnamon - with the rest of the spices. Buy own brand
85g coconut oil - usually with olive oil and in solid format
1 egg white.

1. Heat the Oven to 160'c (this is gas mark 3).
2. Mix dry ingredients in a bowl
3. Whisk Egg whites to stiff peaks in another (dry) bowl. Easiest done with an electric whisker. Doable manually but is a pain in the arse.
4. Mix dry ingredients with coconut oil and egg white
5. Spread out on a large baking tray
6. Bake for 35 mins - after 15 mins, stir
7. Turn off over and leave it in the oven with the door ajar. I left it in for a bit longer on heat until it had all taken on a bit of browning. You might need a few attempts to get it just as you like it.

I eat this with Fage Yog, and some Truvia all mixed in to make a crazy-like concoction.
