Welcome to this week’s edition of Make It Monday! Today, Glass of Weinstein is showing us how to make Gluten Free Pork Dumplings. Our gluten free friends know this is a food that we can’t typically find gluten free out in the wild, so having a version you can make at home is exciting! These homemade dumplings make the perfect weeknight dinner to satisfy your comfort food cravings, with a delicious dipping sauce that adds just the right amount of spice.

To start these gluten free pork dumplings, in a large bowl add in ground pork, finely chopped scallions, green onions, and fresh cilantro. Next, grate in some fresh ginger for a burst of flavor. To make your dipping sauce, combine rice vinegar, gluten free soy sauce, sesame oil, fish sauce, and some garlic chili sauce. Mix all of the ingredients together, and let it sit at room temperature to make sure all your flavors are equally combined.

For the dumpling wrapper, you will need to whisk Bob’s Red Mill sweet white rice flour, xanthan gum, and tapioca flour or tapioca starch. Add 6 tablespoons of warm water to the dry ingredients. Push and press the dough, then begin to knead the dough for a few minutes so that the ingredients can activate in order to become chewy and tender. Pinch and press the dumpling dough into a disk or donut shape, then roll out the dough and form into evenly sized balls to press flat out. The key is to keep the dough in between wet paper towels so that it does not dry. Finally, fill the dumpling wrapper with the pork mixture then fold in half and pinch the edges to seal together.

In a heated pan, add in avocado oil and sesame oil. Place dumplings flat side down into the oil until you hear the sizzle. Steam it by adding in water and immediately covering with a lid. These steamed dumplings are perfectly crispy on the bottom and satisfyingly chewy throughout, perfect for an easy dinner any night of the week.
