Yield: 2 servings
Quantity Ingredients
Bacon
6 strips - smoked bacon
1 Tbls - minced chipotle
½ Tbls - Chef Brik’s “Original Rub” rub
¼ cup - red wine vinegar
as needed - water
Tomato Relish
⅓ cup - cherry tomatoes
1 ea - sliced avocado
½ bu - sliced green onion
½ bu - chopped cilantro
1½ Tbls - mayonnaise
1 ea - juice of lime
2 pieces - butter lettuce
as needed - salt & pepper
Eggs
1 Tbls - butter
2 ea - eggs
2 slices - Monterey jack cheese
2 ea - kaiser rolls
Method
In a nonstick skillet, cook bacon over medium heat till crisp.
Transfer to a paper towel to absorb fat & help get crispy
Pour off dripping from the pan & add chipotle, Chef Brik’s “Original Rub” rub, & simmer for a minute. Add bacon to coat with the glaze for 1-2 mins over medium heat & transfer to a plate
For Tomato Relish: in a small mixing bowl, add all ingredients except avocado, & mix well till combined & set aside
For Eggs: in a nonstick pan, add ½ Tbls of butter & cook the egg over easy (or however preferred). Repeat with the other egg.
