Hello everyone from Chef Max Mariola! Today I take you to the splendid setting of my Milanese cuisine, thanks to Febal Casa, to prepare together a bold and tasty reinterpretation.

Beef tartare is a classic loved for its simplicity and purity of flavours, but today I decided to go further, combining raw cooking with the cooked version, to add a contrast of textures that will surprise your senses. I only use Piedmontese fassona meat, renowned for its tender texture, low fat and rich flavour, ensuring that every bite is a unique experience.

To season our tartare, I mix salt and chilli pepper and a drizzle of extra virgin olive oil. But it doesn't end here! I accompany the dish with soft burrata and fresh tomatoes, creating a perfect marriage of flavors and textures. And for a gourmet touch, a pinch of creativity with accents of fresh basil that enhance the taste of the meat without overwhelming it.

To celebrate this creation, I chose to pair it with a glass of Jeio, a superior prosecco from Valdobbiadene DOC, which with its refined bubbles and fresh taste, beautifully complements the richness of the tartare.
