In these video tutorials, I normally use Bakels Premixes to save on time.
(Bakels is a bakery grade cake premix. Another great one is Allied Mills)

I use these butter based cakes above because they are sturdy under fondant and stable at room temperature, as are the muds.

SOFT SPONGE CAKE:

AMERICAN BUTTERCREAM RECIPE:

FOR THE SUGAR SHARDS / TOFFEE:
200 grams sugar
50 grams water

Mix the two in a saucepan over medium high heat. Dissolve sugar and allow to boil. Stir the pot occasionally (you will want to stir by circling the pot rather than using a spoon. It is incredibly hard to wash dried toffee off of a spoon, believe me!)

Sit and stare at your sugar for 4 to 5 minutes until it turns a golden colour, stirring the pot occasionally. (I mean it! Sit and stare :) she turns ugly quickly if you're not too careful). Once golden, remove from heat and allow to settle for half a minute or so. Pour over aluminium foil that has been sprayed lightly with vegetable oil.

I let mine sit there for about 2 minutes before I started to pick them off and shape them. Be weary of how hot they may be though! Use gloves if you have to in order to protect yourself from the heat.
