Duck Prosciutto Recipe:
Duck Breast
2.5% salt
0.25% cure #1
0.25% juniper berries
sprig of fresh rosemary

note: percentages are relative to the weight of the duck breast

optional coating:
dried rosemary
marjoram
thyme
juniper berries

note: feel free to use any dried herbs or spices that you like with duck or omit the coating altogether
