Ingredients:

1 1/2 cups long grain rice
3 cups chicken broth
1 tsp kosher salt
1 tsp garlic powder
1 bay leaf
1/2 tsp crushed red pepper flakes
3/4 lb ground pork
6 chicken livers, chopped
1 onion, chopped
1 bell pepper, chopped
2 stalks celery, chopped
4 cloves garlic, minced
2 tsp kosher salt
Bacon grease or olive oil
Chicken broth (for deglazing the pan)
Instructions:

In a rice cooker or on the stove, cook 1 1/2 cups of long grain rice with 3 cups of chicken broth, 1 tsp of kosher salt, 1 tsp of garlic powder, 1 bay leaf, and 1/2 tsp of crushed red pepper flakes.
While the rice is cooking, brown 3/4 lb of ground pork in a skillet with bacon grease or olive oil. Once cooked, remove from skillet and set aside.
In the same skillet, add 6 chopped chicken livers and cook until done. Once cooked, remove from skillet and set aside.
In the same skillet, add chopped onion, bell pepper, celery, and minced garlic with 2 tsp of kosher salt. Cook for 5-6 minutes, until the vegetables are softened and fragrant.
Deglaze the skillet with chicken broth, scraping up any brown bits on the bottom of the pan.
Add the cooked ground pork and chicken livers to the skillet with the vegetables, and stir to combine.
Add the cooked rice to the skillet with the meat and vegetables, and stir to combine.
Serve and enjoy!
