Okinawan Sweet Potato Haupia Pie is Hawaiian three layered pie: haupia (creamy coconut custard), purple sweet potato, and short bread. I got this amazing recipe from my friend's mom who lives in Hawaii and wanted to share with you.
Ingredients for 13 x 9 inch pan
short bread or crust
2 cup flour, shifted
1/2 cup sugar
1 cup butter (2 sticks)
1 cup nuts (Macadamia nuts or walnuts), chopped
Filling
1/2 cup butter
1 cup sugar
2 eggs
2 cup Okinawa purple sweet potatoes, baked in 400 degree oven for 1 hour, peeled and mashed
(about 4 medium size)
1/2 cup evaporated milk
1 tsp vanilla extract
some salt
Haupia (coconut custard)
2 13.5 oz coconut milk
3/4 cup sugar
1 cup water
7 tbsp cornstarch
Process
Grease the bottom and side of baking pan and line with parchment paper
Crust:
1. For crust, place butter and sugar in large pan. Cream it with hand mixer
2. Add shifted flour and well.
3.. Add chopped nuts and mix.
4. Spread over baking pan and bake for 15 min in 350 F oven
Filling
1. Cream butter and sugar in a large bowl with hand mixer.
2. Add eggs and mix well
3. Add mashed purple potato and mix very well
4. Add vanilla extract and evaporated milk and mix well
5. Spread sweet potato mixture over crust and bake for 40 min in 350 F oven
6. Let it cool at room temperature
Haupia
1. In a medium sized pot, place coconut milk. Add sugar. Over medium heat, cook until it starts boiling.
2. Mix water and cornstarch in a small bowl. Add into the pot with coconut milk. Using whisk, mix constantly till it gets thick and heavy.
3. Spread haupia mixture over purple potato. Let it cool at room temperature. Once it cool down, keep in the fridge over night.
