Beemster is a hard or semi-hard Dutch cheese made from cow's milk. The production process is similar to other Dutch cheeses, such as Gouda. Beemster matures from 3-4 months in the mild version up to 2 years in the strongly aged version. Depending on the ripening time, the taste can be milky and mild to slightly spicy and very intense. As the cheese matures, caramel notes appear in the cheese.

For production I used:
-15l of milk pasteurized at 65*C for 30 minutes
-3ml calcium chloride
-Meso-thermo cultures according to manufacturer's dosage
-Rennet according to manufacturer's dosage (I added 3ml of calf rennet 1:17000)
