This is REAL South Louisiana Cajun Jambalaya. There are many people that try to imitate our jambalaya but very few succeed. We DO NOT put tomatoes in our Jambalaya. New Orleans folks puts tomatoes in their jambalaya which is the "CREOLE" style. Ours in "CAJUN" style. There's a difference.
