Healthy Pumpkin Bars:

-2 cups organic all purpose flour
-1 tablespoon pumpkin pie spice
-1 teaspoon baking soda
-3/4 teaspoon salt
-1/4 cup monkfruit extract
-1/4 cup unsweetened apple sauce
-1/4 cup plain organic Greek yogurt (I used whole milk yogurt)
-1 tablespoon melted coconut oil
-2 eggs, or 2 flaxseed eggs (combine 2 tbsp flax & 2 tbsp water and sit for 10 min)
-1 teaspoon vanilla
-1 cup canned organic pumpkin
-1/2 cup dark chocolate chips

Preheat oven to 350. Line a 13x9 baking pan with parchment paper. Mix all dry ingredients in a bowl. In a separate bowl mix all wet ingredients. Stir in pumpkin puree. Slowly pour dry mix into wet mix, and stir until all is combined. Stir in chocolate chips. Pour dough into pan, bake for 25-30 mins or until toothpick comes out clean! Let cool before topping with frosting.

Healthy “Cream cheese” frosting

-1/2 cup organic cottage cheese
-1/2 cup organic Greek yogurt
-1/2 teaspoon monkfruit extract
-2 tablespoons extra virgin coconut oil melted and cooled
-1 teaspoon vanilla extract
-Dash of salt

Blend all ingredients in a food processor until smooth. Let mixture set in fridge for about 20 minutes. Spread on top of cooled cake, enjoy!
