Ingredients:

Jelly crystals: 85 gm (1 packet)Water: 1 cupMelted butter: 175 gmSweetened condensed milk: 395 gmPlain arrowroot biscuits: 250 gmMilk: 1/3 cupGelatin: 3 tspJuice of 2 lemons

Method:

Line a 16 x 22 cm rectangular tin.Prepare the jelly according to the packet instructions and set it aside on the counter to cool. Do not place the jelly in the fridge as you don’t want it to set just yet.Crush the biscuits in a food processor and place them into a separate bowl.Add the melted butter and mix until well combined.Firmly press the mixture into the bottom of the prepared tin and then place it in the fridge to set.Place the condensed milk and lemon juice into a separate bowl. Add the dissolved gelatin mixture and mix until completely combined.Pour the mixture over the prepared base and place it in the fridge until set.Gently pour the cooled jelly over the top of the slice and place it in the fridge until set.Cut into slices and store them in an airtight container in the fridge for up to 4 days.

Note:

How to dissolve gelatin: Sprinkle the gelatin powder over 1/3 cup of cold water in a small bowl and allow it to sit for a minute. Place the small bowl into a larger bowl filled with boiling water (using the double boiling method) and stir until completely dissolved. Ensure that the boiling water does not enter the gelatin bowl.
