Soft pain au chocolat
8 pieces
Bread flour 150g
All-purpose flour 130g
Sugar 30g (2 Tbsp)
Salt 3g
Instant dry yeast 7g (1 1/2 tsp)
Lukewarm milk 125ml
Egg 1
Unsalted butter 30g
Chocolate sticks 16 (using Valrhona)

Please prepare ✔️
* Prepare all ingredients at room temperature.

🍫 If you don't have chocolate sticks, melt a regular store-bought chocolate bar, then pour it into a thin container and let it harden in the freezer. Then, cut it into appropriate size and use it. (Width 8cm x Height approx. 1cm)


1. Add all ingredients except butter and chocolate sticks to a clean bowl. Knead it for lowest speed of the dough mixer for about 3 minutes. Once it comes together into a lump, add butter and knead for about 7 to 10 minutes.
2. Transfer the dough to a clean bowl and let it ferment for about 1 hour in a warm place.
3. Place the dough onto a lightly buttered work surface. Using a rolling pin, shape the dough into a rectangular shape. (Approximately 25x38cm) Then divide it into 8 equal-sized pieces.
4. Place chocolate sticks on both ends of the dough and roll them to the center.
5. Apply a small amount of melted butter to the surface. Let it rise about 45 minutes in a warm place.
6. Before baking, apply butter to the surface again. Bake in an oven preheated to 180 degrees for about 15-17 minutes.
7. After the baked bread is completely cooled, top it with chocolate decorations.
