Candied Winter Melon is a popular snack for guests to welcome the Lunar New Year in China. But In Cambodia we usually take it at tea time. It is soft candy and its shape is usually rectangular or cylindrical, it is made from the ash gourd vegetable (also known as winter melon).
Ingredients
350g Cleaned winter melon
1/2 cup [120ml] Water
2/3 cup [150g] Sugar
1/4 tsp Salt
* Soak winter melon for 6 hours or overnight
1.5 L Water
2 tsp [10g] Limestone paste
