Chicken🌮:
6 boneless, skinless chicken breasts
1/2 tsp garlic powder
3/4 C orange juice
1/4 C lime juice
1 tsp cumin
1 tsp chili powder
1/2 tsp cayenne
1 tsp oregano
1 tsp chipotle chili powder
1 tsp salt
Mix together the spices in a bowl. Juice the oranges and limes and stir in the spices. Add everything to a crockpot and cook on low heat for 4-8 hours, until chicken shreds.
Tortillas🫓:
3 C flour
2 tsp baking powder
5 tbsp melted butter
1 C hot water
In a bowl, combine the flour, baking powder, and salt. Make a well in the center of the flour and add the melted butter and hot water. Stir until a shaggy dough forms, then transfer to a floured surface and knead for 2 minutes. Cover with a warm damp towel and rest for 10 minutes. Preheat a skillet over medium heat. Cut dough into 12 pieces, roll into balls, then roll into 8-inch circles. Add a small drizzle of olive oil to the skillet, cook one side of the tortilla until bubbles form (30-60 seconds), then flip and cook another 30 seconds. Repeat until all the tortillas are done!
Peach Salsa🍑🍅:
3 C chopped peaches
Juice from 1/2 lime
1/2 Jalapeño, seeded and finely chopped
3 C diced Roma tomatoes
1/3 C chopped red onion
1/4 C chopped cilantro
Dash of garlic powder
Salt
Pepper
Mix everything together in a bowl
Watermelon Agua Fresca🍉:
2 1/2 C cubed watermelon
Juice from 1 lime
2 tbsp sugar
1 C water
Blend everything together, strain, and store in the fridge to chill
