Pumpkin Pie
Makes 1 each 9 inch pie

Pie crust:
1 1/2 cups AP flour
1 teaspoon salt
1 Tablespoon sugar

1 stick plus 2 Tablespoons butter

2 Tablespoon water
2 Tablespoons vodka
1 Tablespoon apple cider vinegar

Pie filling:
1 can pumpkin puree ( not pumpkin pie filling )
2 whole eggs plus 2 egg yolks
1/3 cup sugar
1/3 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground black pepper ( optional )
1/4 teaspoon ground clove
1/4 teaspoon cardamon
1/4 teaspoon turmeric ( for color )
*or you can use 2 teaspoons of store bough pumpkin spice
1/2 teaspoon salt
1 1/4 cups heavy cream
1/4 cup maple syrup

Whipped Cream:
2 oz cream cheese
1/4 cup sugar
1 cup heavy cream
1 teaspoon vanilla paste or extract
3 Tablespoons bourbon ( brandy and rum work great too! )
