Hi everyone! Welcome back to South North Cooking. Today, I'm excited to share with you a delicious and healthy recipe – Soya Chunks Masala! Soya chunks are an excellent meat substitute, packed with protein and perfect for those looking to enjoy a hearty vegetarian meal. This flavorful curry is not only nutritious but also super easy to make. Whether you're trying to cut down on meat or just want to try something new, this recipe is for you. So, let's get started and whip up this amazing Soya Chunks Masala!

Ingredients:
Soya chunks: 1 cup
Onions: 2 medium, finely chopped
Tomatoes: 2 medium, pureed
Ginger-garlic paste: 1 tablespoon
Green chilies: 2, slit
Cumin seeds: 1 teaspoon
Turmeric powder: 1/2 teaspoon
Red chili powder: 1 teaspoon
Coriander powder: 1 teaspoon
Garam masala powder: 1/2 teaspoon
Kasuri methi (dried fenugreek leaves): 1 teaspoon
Fresh coriander leaves: for garnish
Salt: to taste
Oil: 2 tablespoons
Water: as needed

Instructions:
Preparation of Soya Chunks:
Boil water in a pan. Once it starts boiling, add the soya chunks.
Boil for 5-6 minutes or until they become soft.
Drain the water and rinse the soya chunks with cold water. Squeeze out the excess water and set aside.

Making the Masala:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add the chopped onions and sauté until they turn golden brown.
Add the ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell goes away.
Add the tomato puree and cook until the oil starts to separate from the masala.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
Add the boiled soya chunks and mix them well with the masala.

Cooking the Soya Chunks Masala:
Add water to the pan as required to adjust the consistency of the gravy. Usually, about 1 to 1.5 cups of water is enough.
Cover the pan and let it simmer for 10-15 minutes, allowing the soya chunks to absorb the flavors.
Add garam masala powder and kasuri methi. Mix well and cook for another 2 minutes.

Garnishing:
Garnish with fresh coriander leaves.
Serving:

Serve hot with roti, naan, or steamed rice.
