Ingredients:

For Cooking Dal:

1 cup chana dal (split Bengal gram)
3 cups water
½ tsp turmeric powder
1 tsp salt (adjust to taste)
For Tempering (Tadka):
2 tbsp ghee or oil (can use a plant-based substitute like coconut oil for a vegan option)
1 tsp cumin seeds
1 tsp mustard seeds
1 dried red chili
1 green chili (slit lengthwise)
1 medium-sized onion, finely chopped
1 medium-sized tomato, finely chopped
1-inch ginger, grated
4-5 garlic cloves, minced
1 tsp coriander powder
½ tsp cumin powder
½ tsp red chili powder (adjust to taste)
1 tsp garam masala
1 tsp amchur (dry mango powder) or lemon juice
Fresh coriander leaves for garnish

Instructions:

Step 1: Rinse and Soak Dal
Rinse the chana dal thoroughly under cold water until the water runs clear.
Soak the dal in water for 30 minutes. This helps soften the dal and reduces cooking time.

Step 2: Cook the Dal
Drain the soaked chana dal and transfer it to a pressure cooker or pot.
Add 3 cups of water, turmeric powder, and salt.
If using a pressure cooker: Close the lid and cook on medium heat for 3-4 whistles. If using a pot: Cover the pot and cook for 30-40 minutes, or until the dal is soft but still retains its shape.
Once cooked, mash the dal slightly with the back of a ladle for a creamy texture. Set aside.

Step 3: Prepare the Tempering (Tadka)
In a pan, heat ghee or oil over medium heat.
Add cumin seeds, mustard seeds, and dried red chili. Allow the seeds to splutter.
Add the chopped onions and sauté until golden brown.
Add ginger, garlic, and green chili. Sauté until the raw smell of garlic goes away.
Add chopped tomatoes and cook until they soften and the oil starts separating from the masala.
Now, add coriander powder, cumin powder, red chili powder, and garam masala. Cook for another 2-3 minutes, stirring occasionally.

Step 4: Combine Dal and Tadka
Pour the prepared tadka into the cooked dal and mix well.
Add amchur powder or lemon juice to give the dish a tangy flavor.
If the dal is too thick, you can adjust the consistency by adding a little water and bringing it to a boil.

Step 5: Garnish and Serve
Garnish the chana dal with fresh coriander leaves.
Serve hot with rice, roti, or naan, along with a side of pickle or yogurt.
