In this tutorial, I will teach you how to make perfect macarons without having to dry them and beating with the mixer until the end, that is, when you add the powdered sugar and ground almonds at the end, you continue beating with the mixer, not with a spoon, until reaching the ribbon texture.

Tip: If there is a lot of humidity in the air where you live, I recommend that you, yes, let your macarons dry before baking them.

Convection oven: 135 degrees Celsius for 20 minutes (If you use a fan oven, you can bake all 3 trays at once, like I usually do).

How to 'age' egg whites.
