Let’s make Gauri pujan special kaju katli today. This is a very popular burfi recipe. It is known for its rich flavor and smooth texture. As the name suggests, the main ingredient is kaju or cashew nuts. It looks nice and tastes just awesome. We are making this burfi without worrying about sugar syrup. What I mean to say is, we are not making sugar syrup!! Isn’t it easy? Besides, this is a real quick recipe that you can make within 20-25 minutes!! It gets that perfect texture and taste too!! This recipe doesn’t need lot many ingredients. You can easily make it form very few ingredients and that too in a jiffy!! This is a no cook and no fail recipe!! Ingredients:
• 1 1/2 cup Cashew powder
• 1 cup powdered Sugar
• 1/2 cup / 100 gm Milk powder
• 2 tsp Water
• 2~3 drops Rose essence
• Silver work (Optional)

Method:
• Mix rose essence and water well together.
• Heat up a pan on medium heat and add cashew powder.
• Roast it a little for just about 3 minutes.
• Make sure the color of cashew powder doesn’t change and oil is not released from it.
• When the cashew powder is a little hot, add milk powder and roast it together for about 2 minutes.
• Turn off the gas and let the mixture cool down a little for about 5 minutes.
• Take the mixture out into a dish and add powdered sugar.
• You can use icing sugar in place of powdered sugar.
• Add a little rose essence water at a time and mix well. The mixture should come together like
dough.
• If the mixture sticks to your hand then use a little ghee.
• Place the mixture on a butter paper and cover it with another butter paper.
• You can use plastic sheet in place of butter paper.
• Roll the mixture into thin square or rectangle and garnish with silver work.
• Using silver work is optional. You can skip it if you don’t want.
• Cut it into diamond shape pieces. Kaju katli is ready.
• It has shelf life of about 5-6 days at room temperature ad in freeze for about 8-10 days.
