Here is a great Vegetable Soup Canning Recipe that you can enjoy your gardens bounty well into the winter. Our homestead enjoys canning our summer vegetables so we can enjoy the whole year!

Anything's Possible Vegetable Beef Soup
Day 1
In a crock pot place a two pound chuck roast in the Pot and fill crock with water to the top of your slow cooker. This is your beef broth and meat. When meat falls apart let cool and set both meat and broth in refrigerator till tomorrow.

Day 2 (canning Day)
Add Everything below into a large pot as you chop them up.
remove skins and core from 30 tomato's and place pulp and juice into a big pot.
Add 1 quart sweetcorn
Add 1 quart green beans
Dice 2 large onions
Dice 3 big sweet peppers such as bell or Italian fryer type.
Slice 12 okra
Slice 1/2 pound carrots,
Core and slice 2 Serrano and 2 Jalapeno Peppers
slice up 1 sprig of Basil
Mince 4 cloves garlic
Peel and chop 4 pounds red potatoes into bite size pieces
Take meat and broth out of the refrigerator and add broth and any skim fat into the vegetable pot. Take the meat and chop up finely and place into the pot to finish the pot up.
Place on stove over medium High heat and bring to a simmer once a gentle boil occurs. Add salt and pepper to taste but be sure to not over salt before canning. You can also add thyme, Adobo seasoning, or any other ingredient you want before canning.
There should be plenty of liquid from the meat broth and the tomatoes to make a good soup. If too thick you can add additional beef broth if you choose.
To can use a pressure cooker.
Fill quart jars with soup leaving a 1/2" head space at the top of the jar. Add 1/2 tsp to top of jar once jar is full. Wipe off the lid with a clean wet cloth and add canning lid and ring.
Don't over tighten lid.
Pressure cook 85 minutes at 10 pounds pressure.

I hope you enjoy this soup as much as we do. We commonly serve this soup over the top of rice in a bowl. But it is delicious as a soup with no added items.
