I made a homemade oxtail spice recently that packed a ton of flavour, below is a recipe for that but this was top tier...I was surprised by how flavourful this was and it paired up so well with Basmati Rice and Gungo/Pigeon Peas. Absolutely delicious!

Oxtail Seasoning Recipe
------------------------
INGREDIENTS:

1 Tbsp Paprika
1 Tbsp Dried Ground Chilli
2 Tbsp Garlic Powder
1 Tbsp Coriander Powder
1 sml Cinnamon Stick
1 sml Star Anise
1 tsp Cloves
5 Bay Leaf
2 Tbsp Red Chilli Flakes
3 Tbsp Dried Pimento or allspice
1/4 Cup Brown Sugar
1 Tbsp Salt

METHOD:

1) [OPTIONAL]Toast whole spices over medium low heat in a skillet until fragrant
2) Blend/grind whole spices with sugar and salt
3) Combine all Blended Spices with the other ingredients
4) Place in an airtight container and store in a coold dry area or in the freezer
