We love the meat/spice combo in this so much, I use one pound hamburger
But originally the recipe calls for half a pound hamburger
I mentioned this to Martin and he said don't change, use the pound!
This can be adjusted according to your taste.

Set your oven to 400 degrees and let cast iron skillet warm about 5-10 minutes over medium heat

2 tablespoon oil
1 onion chopped fine
1 pound lean hamburger (or 1/2 pound)
1 tablespoon chili powder
1 garlic clove minced
1/4 teaspoon dried oregano
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/2 cup chicken broth
1 pound cheese (I used all Mexican cheese)
1/4 cup chopped jalapenos
8 ounces tortilla chips

Adjust oven rack to middle position and set oven for 400 degrees
Heat 12" cast iron skillet over medium heat for 5-10 minutes on top of stove
Add oil and heat until shimmering
Add onion and cook until softened, about 5 minutes
Add ground beef and cook, breaking it up, until no longer pink, about 5 minutes
Stir in chili powder, garlic, oregano, cumin, cayenne pepper, and salt and cook until fragrant, about 2 minutes
Stir in broth being sure to scrape up any browned bits and cook until nearly evaporated about 3 minutes
Put in a bowl and mix in 2 cups of the cheese
Remove skillet from the burner and wipe clean with paper towel
Put half of the tortilla chips in skillet
Sprinkle 1 cup cheese then 1/2 of the meat and 1/2 of the jalapenos
Repeat with nacho chips, rest of cheese, rest of meat and rest of jalapenos
Put skillet in oven and bake until cheese is melted, about 10-15 minutes
Enjoy out of the skillet or on plate!
