Today we're talking big sandwiches on the smoker with these over-the-top Smoked French Dip Sandwiches.

Daniel is starting with an eye of round roast that he's smoking over Cowboy Hickory Hardwood Briquets and cherry wood chunks, showing you how to make the best French dip you have ever tasted with a beefy au jus for dipping and a smoked onion dip.

This is one of those recipes that you will be making over and over again!

For the Smoked Eye of Round
► 3 to 4 lbs Eye of Round
► 1 tbsp Olive Oil
► 2 tbsp GirlCarnivore Over Easy from Spiceology
► 1 tsp Salt
► 1 tsp Pepper

For the Au Jus
► 1 tsp Beef Bouillon
► 3 cups Beef Stock
► 1 Sweet Onions
► 1 tbsp GirlCarnivore Ooomami Powder from Spiceology

For the Onion Dip
► 1 Yellow Onion
► 5 shallots
► 12 scallions, chopped (white and green parts separated)
► 1 1/2 cups sour cream
► 1 cup mayo
► 2 tsp white wine vinegar
► 1 tsp Worcestershire sauce

For the Sandwiches
► Rolls
► Provolone Cheese
