Chuna Macha Besara is a classic Odia dish!
Chuna Macha Besara Recipe (Odia-Style Small Fish in Mustard Curry)
Ingredients:
For the curry:
250 gm small fish (chuna macha/mourala/koi)
2 tbsp mustard oil
1 tsp panch phutana (Odia five-spice mix)
1 tsp turmeric powder
1 tsp red chili powder
1 tsp mustard paste (sorshe)
2 cloves garlic, minced
1-inch ginger, grated
1 onion, chopped
Salt, to taste
2 tbsp chopped cilantro (optional)
For the mustard paste:
2 tbsp mustard seeds (rai/sorshe)
1 tsp cumin seeds (jeera)
1 tsp coriander seeds (dhania)
2-3 green chilies
1/2 tsp turmeric powder
Water, as needed
Instructions:
1. Prepare the mustard paste: Soak mustard seeds, cumin seeds, coriander seeds, and green chilies in water for 30 minutes. Grind into a smooth paste.
2. Marinate the fish: Mix turmeric powder, red chili powder, and salt. Apply to the fish and set aside.
3. Heat oil in a pan: Add panch phutana and let it crackle.
4. Add onions, garlic, and ginger: Saute until onions are translucent.
5. Add the mustard paste: Cook for 2-3 minutes.
6. Add the marinated fish: Cook for 2-3 minutes.
7. Add water and salt: Bring to a boil, then simmer until the fish is cooked.
8. Garnish with cilantro (if using).
Tips:
Adjust the amount of chili powder to suit your spice level.
Use fresh mustard paste for authentic flavor.
Serve with steaming hot rice.
