STUFFED MINI SWEET PEPPERS in AIR FRYER - Low Carb Diet | NO rice, cheese, or potatoes - So TASTY ‪@ShinewithShobs‬ You are going to fall in love with this healthy nutritious bites. Quick and easy. Great for dinner, appetizers, or party starters. Vegan, Gluten free, & Plant-based. This stuffed mini sweet peppers are going to keep your skin glowing, body healthy, and hair growing. I used cauliflower rice for the filling. Turned out delicious.

Stuffed Mini Sweet Pepper Recipe
Ingredients:
8 Mini sweet peppers
1 teaspoon fennel seeds (saunf)
1 teaspoon cumin seeds (jeera)
2 green chillies
8 to 10 garlic cloves
1 large red onion
Pink Himalayan Rock Salt to taste
1 cup Cauliflower rice (frozen or fresh, microwave for 6 minutes)
1/4th teaspoon Black pepper
1/2 cup almond flour
2 teaspoon olive oil
1 to 2 teaspoon of coconut milk or oat milk

Directions:
1. Slit the top of the peppers lengthwise & brush lightly with oil & keep it aside
2. Dry roast fennel seeds & cumin seeds. Grind to a fine powder & keep it aside
3. Prepare the stuffing by heating a pan, add oil, green chillies, garlic, onion & saute
3. Add the ground powder, salt & saute for a few seconds. Then add in the cauliflower rice (see the tip in the video on how to keep it moist)
4. Add black pepper & in the end add almond flour. Saute for a few seconds. The filling is ready
5. Watch the video if you have any doubts on how to prepare the filling. Now fill the stuffed peppers
6. Air fry for 10 minutes. Each air fryer is different. Please adjust the temperature & time according to your liking.
