INGREDIENTS
4 large onions sliced for frying ( barista )
For the prawn marination :
1 tablespoon biryani masala
1 tablespoon garam masala
1 teaspoon salt
1 teaspoon cumin powder
1 1/2 teaspoon coriander powder
1 teaspoon chilli powder
3 tablespoon yogurt
2 tablespoon oil ( from leftover fried onions )
18 prawns
1 teaspoon garlic paste
1 tablespoon ginger paste
1 bunch large coriander leaves ( 1/2 cup keep aside for layering on rice )
2 tomatoes
2 green chillies
1 tablespoon lime juice
1 handful of fried onions
FOR THE GREEN PASTE
1 green chilli
1 inch ginger
3 cloves garlic
1/4 teaspoon turmeric powder
small bunch of coriander leaves
grind this to a fine green paste
BIRYANI LAYERING
250 gms rice soak in cold water for 1 hour
Food colour orange 1 pinch dissolve in hot water
Saffron 1 pinch dissolve in hot milk 1/4 cup
1 1/2 tablespoon ghee melted
