Ingredients:
For Masala Laccha Paratha:
Maida flour – ½ kg
Salt – ½ tsp
Ajwain (carom seeds) – 2 pinches
Water – 1 cup
Fry oil – as needed for frying
Masala Filling:
Salt – ½ tsp
Zeera powder (cumin) – ½ tsp
Dhaniya powder (coriander) – ½ tsp
Chili flakes – ½ tsp
Turmeric powder – ½ tsp
Chat masala – ½ tsp
Kalonji (nigella seeds) – ½ tsp
Hara dhaniya (fresh coriander) – 2 tbsp, chopped
For Aloo Raita:

Yoghurt – ½ kg
Salt – ½ tsp
Chat masala – ½ tsp
Oil – 2 tsp
Garlic – 6 cloves
Zeera (cumin seeds) – ½ tsp
Potato – 1 (boiled and diced)
Cucumber – 1 (finely chopped)
Onion – 1 (finely chopped)
Tomato – 1 (finely chopped)
Green chili – 2 (finely chopped)
Hara dhaniya (fresh coriander) – for garnish
Directions:
For Masala Laccha Paratha:
Prepare Dough:

In a bowl, mix maida, salt, and ajwain.
Gradually add water and knead the dough until soft and smooth.
Cover the dough and let it rest for 20-30 minutes.
Prepare Masala Filling:

In a small bowl, mix salt, zeera powder, dhaniya powder, chili flakes, turmeric powder, chat masala, kalonji, and chopped hara dhaniya.
Shape the Paratha:

Divide the dough into small balls.
Roll out each ball into a thin circular shape.
Brush with oil and sprinkle the prepared masala mixture evenly.
Roll the dough into a tight log and then coil it into a spiral.
Roll the spiral out again into a circular paratha.
Cook the Paratha:

Heat a tawa (griddle) and place the paratha on it.
Cook on medium heat, applying oil on both sides, until golden brown and crispy.
Repeat the process for all parathas.
For Aloo Raita:
Prepare the Tadka:

Heat oil in a small pan.
Add crushed garlic and zeera, and fry until fragrant and golden brown.
Set aside.
Mix the Raita:

In a bowl, whisk the yoghurt until smooth.
Add salt, chat masala, boiled potato cubes, chopped cucumber, onion, tomato, green chili, and hara dhaniya.
Mix well.
Finish the Raita:

Pour the prepared garlic and zeera tadka over the raita and stir.
Garnish with extra hara dhaniya.
Serve the Masala Laccha Paratha hot with the refreshing Aloo Raita! Enjoy!
