Cake Batter:
1 lemon zest
40 g (3 tbsp) white granulated sugar
2 tsp lemon juice
1 large egg
45 g (1/4 cup) flavourless oil
55 g (1/4 cup) milk
55 g (1/2 cup) all purpose flour
15 g (1 1/2 tbsp) cornstarch
1/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
Frosting:
75 g (1/3 cup) whipping cream
40g (2 tbsp) raspberry jam
Fresh raspberries for filling the cake
