Simple Tongseng Without Coconut Milk

Tongseng: Mutton or beef stew dish in curry-like soup with vegetables and sweet soy sauce.

Ingredients

* 300 gr Mutton, or Chevon or Beef,
* 3-4 sheets of Cabbage leaves, cut into rather large size,
* 6-10 pieces of Cayenne,
* 2 Scallions, chopped
* 1 Tomato, Roughly chopped,
* 1 tsp. of Broth powder,
* 3 Sheets of Bay leaves,
* 1 stalk of Lemongrass (roughly grinded),
* 500 ml of boiled water, can be adjusted to 500-1000 ml,
* 4-6 tbsp. soy sauce, according to taste,
* 1 tsp. sugar,
* Enough oil for sautéing.

Ground ingredient

* 5 cloves of Shallots,
* 4 cloves of Garlic,
* 3 grains of Candlenut, roasted.
* a segment of fresh Turmeric,
* a segment of fresh Ginger,
* ½ tsp. Granulated salt.
