AIR FRIED HEALTHY GUJIYA Recipe made with Multigrain Flour (Atta) | Healthy Karanji | No White Sugar ‪@ShinewithShobs‬ Here's an east tasty healthy Gujiya recipe which turned out so yummy. Perfect crispy texture and the filling just melts in your mouth. This recipe is great for those sweet lovers who are looking for a healthy twist. Enjoy this Gujiya made with multigrain flour (Atta) during the festival season - Holi & Diwali. No more deep frying, just air frying with simple easy method. Low carb sweet snack. Healthy Gujiya Recipe
Ingredients for Dough:
2 cups multigrain flour
1/2 cup ghee
Dash of Pink Himalayan Rock Salt
1/2 cup water
Ingredients for Filling:
1 cup almond flour
1/2 cup desiccated coconut
1/2 cup pistachios
1/4 tsp cardamom powder
1 tsp ghee
1/2 cup jaggery powder
2 tbsp oat milk or regular milk
Ingredients for Syrup:
1 cup water
1/2 cup monk fruit sugar
Pinch of saffron
1/4 tsp cardamom powder

Method:
1. To make the dough, add multigrain flour, ghee, salt, & mix well until it looks crumbly. This is important as it will help the outer layer of Gujiya to be crispy. Then slowly add water little by little and mix everything together to form a stiff tight dough. Cover with a wet paper towel & keep it aside for 30 min. After 30 min, roll it into a round shape. Use a cookie cutter or a bowl to cut perfect circle. Then press the edges around. Moist the edges with wet finger tips. Add the filling, seal and shape it by twisting or use a fork to create the desired design of your choice.
2. For filling - heat heavy bottom pan. Add almond flour, coconut & pistachios. Mix it under low flame for 45 seconds. Add ghee & give a quick mix. Turn the gas off. Add jaggery powder, cardamom powder and lastly add little milk. The filling should be moist and fluffy.
3. For the syrup, add water & monk fruit sugar. Let it dissolve well. Then add a pinch of saffron & cardamom. Let it boil for 5 min.
4. Air Fryer Method - Place the Gujiya in the air fryer basket and air fry for 12 min. Flip once in between. Then air fry for 5 more min. Spray oil optional.
5. Dip the air fried Gujiya in the syrup for 2 to 5 minutes. Let it soak well. This will give a glaze and taste yummy. Then garnish with coconut flakes & pistachios. Enjoy!
