I was having a couple of mates over for dinner, and decided to bbq a brisket low n slow. One wanted to understand the process, but obviously wasn't going to sit around all day, so I decided to record the major steps.

Brisket was 3.8 kg at start and cook time was 9 hrs at mostly 240-270f. Wrapped in foil at about 163f when it stalled. BBQ is a Fornetto Basso. Took off at 207f internal temp. Result was damn tasty. Not perfect, could probably have cooked for another hour to melt some of the excess fat but everybody thoroughly enjoyed so I declare it a success!
