Atcharang Sayote | Pickled Choko/ Chayote

INGREDIENTS:

1 kilo Sayote/Choko (shredded)
1 medium Carrot (shredded)
5 cloves Garlic
1 bell pepper/capsicum (julienned,1/2 red and 1/2 green)
2 tbsp Ginger (julienned)
1 tbsp Salt (for draining Sayote juice)

Pickling Mixture/Syrup:

2 cups White Vinegar
1 tbsp Black Peppercorn
1/2 tbsp Salt
3/4 cups Granulated white sugar

Place in sterilized airtight jars and store it in the fridge for up to six months.

TIP: Put salt in shredded sayote and store in the fridge for 1 hour before extracting the juice with a cheesecloth or hand pressing.
