Quarantine life seems to have everyone baking banana bread. So here is a great recipe for banana bread or banana bread muffins!
I had a request for this recipe on Instagram and decided to make muffins using my banana bread recipe. These muffins cook quicker and are great as a sweet breakfast treat with coffee. #Stayhome and save lives #withme :)

INGREDIENTS
1 1/4 lb (567.5 g) fresh ripe bananas (mashed)
2 large eggs (room temperature)
3/4 packed cup (170 g) light or dark brown sugar
2 tsp vanilla extract
1 stick (113 g) unsalted butter (softened)
1/3 cup (75 g) greek yogurt or sour cream
1 3/4 cup (220 g) all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup chopped walnuts (optional)
Makes 16 to 18 muffins baked at 350º F / 176º C for 20 to 23 minutes
Makes one loaf in a 9x5 inch pan baked at 350º F / 176º C for 60 to 65 min
