For the Craquelin:

Unsalted butter 100g
All purpose flour 110g
Sugar 100g
Cocoa powder 10g

Mix softened butter with flour, sugar, and cocoa powder. Use the paddle attachment on low speed to combine the ingredients (about 1-2 minutes).

Roll the dough between two sheets of parchment paper to a thickness of 1.5 mm, then place it in the freezer for at least 15 minutes. Use a cutter to make 8 cm rings with a hole in the center. Keep the rings in the freezer until ready to use.

For the pastry rings:

Ingredients:
150g water
150g milk
5g salt
5g sugar
110g unsalted butter
180g flour
6 eggs

Place the butter in a saucepan, add the salt, sugar, water, and milk. Bring to a boil until it is vigorously boiling and bubbling.
In one motion, add all the flour and stir energetically using a sturdy silicone spatula. Cook over medium heat, stirring, until the dough becomes smooth, homogeneous, and shiny (about 2 minutes).

Transfer the dough to a mixer bowl and start mixing it with the paddle attachment on low speed. When it cools to 120-140 degrees Fahrenheit, add the eggs in parts, mixing well each time until smooth.

The dough should be very smooth and glossy. Transfer the dough to a piping bag with an open star nozzle.

Pipe the pastry onto a baking sheet lined with parchment paper in a staggered pattern for good air circulation.

The diameter of the rings should be 6 cm. Place the craquelin on top. You should have 2 trays with 6 rings each. Bake them one at a time.

Bake in the oven for 30-40 minutes at 330 degrees
Fahrenheit. Bake until a confident golden crust forms.
Remove from the oven and let them cool completely.

Once baked, cut the rings in half horizontally and fill each with cream. Sprinkle with crushed almonds and cover with the other half. If desired, dust the pastries with powdered sugar.
