Ingredients:
- 2 medium sweet potatoes
- 2 tbsp Primal Kitchen avocado oil
- ¼ cup parmesan cheese
- 1 tbsp dried rosemary
- Salt and pepper to taste
Directions:
1. Pierce each sweet potato with a fork + microwave or boil until semi-soft, flipping and repeating
2. Slice into rounds
3. Lay flat on a baking sheet or air fryer basket
4. Smash using a glass or fork (oil the bottom of the glass so it doesn’t stick)
5. Sprinkle with parmesan cheese, rosemary, salt and pepper
6. Broil for 15-20 minutes
