Here's my recipe for Bahamian Crab and Dough with a TWIST.
Traditional Crab and Dough is essentially Crab, dough, onions and thyme; simple but that depends on which island you're from.
I decided to share MY TAKE on this recipe with a herb-infused dough and the ever so controversial "crab back down" steaming method. (some people swear by steaming it belly down). I say. how you steam it depends on what you want to accomplish with the flavors.
For me, I wanted to keep the flavor of the crab concentrated, while allowing the flavors of the herbs, garlic and onion to infuse the fat.
