Recipe for the Udupi style Halasina Hannu or Jackfruit Payasa is often prepared in family functions. Narrated in Kannada with English subtitles.

Have provided lots of tips on preparing the Payasa to obtain the right consistency, texture, and taste. We can make Jackfruit Payasa with Moong Dal or with Rava/Semolina. In this video, I provide the recipe using Moong Dal since it is more common than the Payasa prepared using Rava. This is the one which we often see prepared in family functions of the Udupi/Mangalore region.

Ingredients:

Moong Dal - 1 Cup
Grated Coconut - 1 & 1/2 Cups
Ghee - 3 Tbsp
Cashewnuts - 15-20
Chopped Jackfruit - 1 Cup
Jaggery - 1 & 1/4 Cups
Salt - 2 pinches

Method:

1. Roast 1 Cup Moong Dal. Roast only till the aroma of Dal appears. Mix well with the help of a spoon in medium flame. Roast the Dal till it changes to golden in color.

2. Transfer to a bowl and let it cool completely.

3. Wash the Dal with water and remove the water from the bowl.

4. Cook the Moong dal directly in the pressure cooker. Add the washed Dal to the cooker. Add water till it immerses the Dal. Cook till you hear one whistle. The Dal will become soft.

5. Add 1 and 1/2 Cup grated Coconut to the mixer jar. Add 1/4 Cup of Water and prepare a smooth paste. Keep it aside.

6. Add 2 Tbsp Ghee to a pan. Once Ghee melts, add 15-20 Cashew Nuts and roast the same.

7. Roast till the Cashew Nuts turn golden in color and transfer to a bowl.

8. To another vessel, add 1 Cup chopped Jackfruit or Halasina Hannu. Add water till it immerses the Jackfruit pieces. Cook for 4-5 minutes. Fruit should only be cooked slightly. Do not overcook the fruit. Keep aside.

9. Add 1 and 1/4 Cup powdered Jaggery to a vessel. Add water till it immerses the Jaggery. Melt the Jaggery. Filter the melted Jaggery to the vessel in which you are going to prepare Payasa.

10. To the same vessel, add cooked Moong Dal. Mix well with the help of a ladle to remove the lumps in the cooked Dal. Add the ground Coconut paste.

11. Mix well with the help of a ladle and allow the Payasa mixture to boil. Add 2 pinches of Salt. Adding Salt will enhance the taste of the Payasa. Add water and adjust the consistency of the Payasa.

12. Boil the Payasa for 8-10 minutes in medium flame. Finally, add the cooked Jackfruit or Halasina Hannu and boil for 2-3 minutes. Add 1 Tbsp Ghee and mix well and boil the Payasa.

13. Do not boil the Payasa mixture for more than 2-3 minutes after adding Jackfruit. This will help avoid Payasa becoming sticky due to fibrous content in Jackfruit. Boil for a minute.

14. Add the Ghee roasted Cashews and mix them and switch off the flame.
