Catfish:
1 cup cornmeal
1/4 cup flour
1/2 tbsp baking powder
1 tsp salt
1 tbsp salt free cajun seasoning
1 tsp garlic powder

2 catfish filets

Wet Batter :
3 eggs
1 tbsp mustard
2 tbsp hot sauce

Dirty Rice
1 1/2 cups long grain rice
1/2 pound spicy italian sausage
1 tbsp butter
8 oz andouille sausage
1/2 onion
2 ribs celery
1/2 red bell pepper
1 tbsp salt free cajun seasoning
1 tbsp beef bouillon
1/4 tsp creole seaoning
3 cups water
bay leaf

Coleslaw
red cabbage
cabbage
carrot
mayo
salt/ pepper to taste
1 tsp sugar
1 tsp vinegar
1/4 cup mayo
measurements are estimates, do everything to taste

Cheese sauce
1 tbsp butter
1/2 tsp flour
1 1/2 cup half n half
1 tbsp water ( added once it cooled to loosen it up)
2 oz white cheddar cheese
pinch sazon and pepper
