Oklahoma Onion Burger
for each burger:

a 3-ounce ball of ground beef
1 slice of American cheese
a large handful of VERY thinly sliced sweet onions
1 potato roll
salt

Heat a skillet or griddle over high heat.

Season the burger on both sides with salt and place it on the heated griddle or pan. Lay the mound of onions on top and press it flat with a VERY heavy spatula or 2 spatulas. Press it down, pressing the edges a little more than the center. Salt the onions.

Cook until the bottom is quite crispy and juice is bubbling up through the onions. Flip it over, then lay the slice of cheese on top, and the top bun cut-side down on top of the cheese. Lay the bottom bun on top. Lay a towel over the burger to melt the cheese and soften the bun, while finishing the other side.

Scrape up the burger and lay it on the bottom bun. Eat immediately.
