☞ Breakfast Tacos

This is a super rough recipe!

2 cloves of garlic, crushed
Trader Joe’s Soy Chorizo (or any veggie ground protein with some cumin, salt, and pepper)
0-2 Thai chilies, thinly sliced with or without seeds
1/4th cup black beans
2 eggs
1/4th cup (or more!) shredded cheese blend
3 soft corn or flour tortillas
Optional: taco sauce (mine is from Trader Joe’s)

Obviously these would be great with salsa, guacamole, etc.!


Brown the Soy Chorizo in a pan over medium. Add the black beans after the Soy Chorizo has a couple minute head start.

Once browned, lower heat to low, and add chilies and crushed garlic. Let cook for a minute.

Add two eggs to pan and scramble with the mixture. Turn off heat before the eggs get too dry.

While you are doing the above, warm your tortillas over a gas stove, or in another pan (or in a microwave. I’m not here to judge).

Add cheese to taco mixture and stir to melt.

Evenly divide between the shells, add sauce, and enjoy!
