Ingredients:

1/2 kg dry gongura leaves
Tamarind juice (as needed)
6-7 red chillies
1/2 tsp fenugreek seeds
2 tsp coriander seeds
2-inch cinnamon stick
2 cloves
1 kg chicken
1/2 tsp turmeric (for chicken)
1 tsp salt (for chicken)
4 tsp oil (for cooking chicken)
800 grams oil (for frying chicken)
8-9 red chillies (for masala base)
1 bay leaf
1 inch ginger
2 tbsp garlic ginger paste
1/2 tsp turmeric (for masala base)
2 tsp salt (for masala base)
8 tsp red chilli powder

Method:

Heat a pan and add 100 grams of oil. Add 1/2 kg dry gongura leaves and tamarind juice. Mix well and cook until the oil separates from the leaves.

In a separate pan, roast 6-7 red chillies, 1/2 tsp fenugreek seeds, 2 tsp coriander seeds, a 2-inch cinnamon stick, and 2 cloves until fragrant. Grind the roasted spices into a fine powder.

In another pan, add 1 kg chicken, 1/2 tsp turmeric, and 1 tsp salt. Add 4 tsp oil and stir until the chicken is cooked. Turn off the stove.

Heat 800 grams of oil in a fresh pan. Fry the cooked chicken until it turns brown and transfer it to a plate.

In the same oil, add 8-9 red chillies, one bay leaf, 1 inch of ginger, and 2 tbsp garlic ginger paste. Cook until the raw smell disappears, then turn off the stove.

Add 1/2 tsp turmeric, 2 tsp salt, 8 tsp red chilli powder, and the ground masala to the pan. Mix well.
Add the fried chicken and gongura leaves to the masala. Mix well and serve hot with ghee rice or chapati.
