It suddenly went quiet at the table, why you may wonder? - because everyone was tucking into my Chicken in Chilli Black Bean Sauce that had just appeared!! Very satisfying as a cook when some serious eating of your dish occurs:)
A simple meal with big flavours, ideal for a quick budget dinner for the family!
Ingredients:-
300- 350g chicken, chopped
1 large or 2 med onions, chopped
1 small red bell pepper, chopped
1/2 small green bell pepper, chopped
3 cloves garlic, chopped finely
1 green/red chilli, sliced thinly
1 generous tablespoon black bean sauce
1 level teaspoon plum sauce
cornflour slurry
cooking oil
Method:-
Chop chicken, onions and peppers in approximately the same size.
Deep fry chopped chicken in 3 cups hot oil in wok, cook until meat turns white, remove.
Using about 1/3 cup of same hot oil add onions, stir fry for ~ one minute then add sliced chilli and garlic followed by chicken.
Stir fry for a couple of mins then add black bean sauce and a little water, continue stirring.
Add bell peppers and continue to cook and stir until peppers are softened a little, but still have bite, don't overcook them.
Add a little water if mix begins to stick or appears a bit dry.
Add one teaspoon plum sauce, mix in well.
Thicken with a little cornflour slurry and you're done!
